The restaurant’s entire lifecycle is monitored, from the purchase of raw materials to waste separation. This means, for example, that over 50% of raw ingredients are organic, that most fish and shellfish purchased is certified as sustainable, and that Fair Trade products are used. We have banned genetically modified raw materials and phased out almost all products containing palm oil. We work continuously to reduce the climate impact of our menus and minimise food waste in our restaurants.

All our daily cleaning products are eco-labelled, food waste is converted into biogas, and most of our other waste products – such as glass, plastic, metal, cardboard, paper and cooking fat – are separated for recycling. We use 100% green electricity. Single-use items are used restrictively, and the few that we use are eco-labelled or made from renewable raw materials. Our laundry and printing services are certified according to the Nordic Swan Ecolabel. We work continuously on improving our energy efficiency, in regard to lighting, ventilation control and use of kitchen appliances, and are constantly striving to develop and implement environmental improvement measures.
